Mexican rice is very common all around Latin America and now people all over the world are exploring Mexican traditional recipes. We will be writing about three Mexican rice recipes in this article.  

Some people even love eating Mexican rice recipes for breakfast although I would not prefer. We have listed 3 easy to cook Mexican rice recipes with all the ingredients you need. 

Below is the list of 3 Mexican rice recipes

Recipe 1: Chicken Mexican Rice


  • 2 tbsp of canola oil or olive oil
  • 1kg Chicken breast without skin (Cut it into 1-inch pieces)
  • 1 green pepper (thinly sliced)
  • 1 onion (Chopped)
  • 1 cup chicken broth
  • 1 can of corn 
  • 1 cup of salsa
  • Salt as per taste
  • Chili powder as per taste
  • Pepper powder as per taste
  • 1.5 cups of rice
  • 1 cup cheddar cheese

Steps to cook Chicken Mexican rice

Step 1: In a large saucepan, add oil over medium heat and then add the chicken, green pepper, and onion and saute well. Cook for around 7 to 8 mins and mix well until the chicken is cooked and vegetables are not soft.

Step 2: Add corn, chicken broth, and salsa (Mix well). Add chile powder and pepper. Next, add salt as per taste.

Step 3: Cover the pan with a lid and cook for 15 min to 20 mins or until the rice is cooked well. Mix with a fork and add cheese and let it sit. Your chicken Mexican rice is ready to serve.

Recipe 2: Jalapeno Mexican rice


  • 1 Tbsp Olive oil
  • 1 onion finely chopped
  • 2 cloves Garlic finely chopped
  • 1 red bell pepper thinly sliced
  • 3 Jalapeno Thinly sliced
  • 1 cup White rice
  • ½ cumin powder
  • Salt to taste
  • Freshly ground pepper as per taste
  • 1 small can Tomato Sauce
  • 1 cup chicken broth
  • A handful of chopped cilantro

Steps to cook Mexican rice

Step 1: Wash and drain the rice make sure

Step 2: In a large no-stick saucepan add olive oil over medium heat. Add the chopped garlic, onions, Jalapeno, and bell pepper. Saute it well for around 3 to 4 minutes. 

Step 3: Add the rice to the saucepan and toss it till it becomes brown.

Step 4: Now add the chicken broth to the pan with tomato sauce. Add cumin, salt, and pepper as per taste.

Step 5: Reduce the flame and simmer for 15 mins or until the rice is cooked.

Step 6: Garnish with cilantro 

Recipe 3: Brown Mexican Rice


  • 2tbs Canola Oil
  • 2 cups brown or white (As per your preference)
  • 3 cups of broth (You can use both chicken or vegetable broth)
  • 1 ½ cups of onion (Finely chopped)
  • 2 to 3 cloves of finely chopped garlic
  • 1 can of tomatoes (Mexican style tomatoes would be preferred)
  • 1 red bell pepper (Cop it finely)
  • Salt to taste
  • Pepper as per requirement

Steps to cook Brown Mexican rice

Step 1: On a non-stick pan heat canola oil on a medium-high flame. Add the rice and saute it well for around 5 mins or until the rice is golden.

Step 2: Add half a cup of chicken or vegetable broth to the pan. Then add chopped onions, garlic and mix it well for a couple of minutes. 

Step 3: Now add the remaining broth with bell peppers and tomatoes and mix well. Lower the heat and cover the lid. Cook for 25 mins or till the rice is cooked. Add salt and pepper to the mixture.
